|What a great time we had!
The first annual TASTE OF JONESBOROUGH was held
March 22, 2011 at the International Storytelling Center.
Over 55 Jonesborough merchants participated featuring
food, music, storytelling, a silent auction,
a sampling of what Jonesborough has to offer.
The Parson's Table showcased Angus Roast Beef Crostini with Horseradish Aioli, specially
prepared by Michael with layers of savory flavors.
Michael starts with his bread, fresh baked at The Parson's Table "in the old style," brushed
with olive oil, then adds fresh greens, layers of Angus roast beef, the Parson's own
horseradish aioli and tops it with roasted red peppers and a special blend of herbs.
Southern Maryland Stuffed Ham was another showcased favorite. Dating back to the early
17th century, stuffed ham is found exclusively in St. Mary's County, Maryland except a few
communities in central Kentucky settled by St. Mary's Countians after the Revolutionary
A labor intensive process, spices & seasonings are added to chopped cabbage, kale &
onions. These are stuffed "with the thumb" into deep slits or pockets slashed into a whole
corned ham. Remaining greens are packed around the ham, which is placed in a cloth
bag, tightly tied & boiled. It is traditionally served cold in a sandwich with white bread.
